Spiced Potato Wedges

This is possibly one of the easiest recipes in our repertoire. We love making these spiced potato wedges throughout the year because they are so versatile and go with almost any dish where you want to add a touch of spice.

This is a great vegan and gluten free recipe. Unless you have an aversion to potatoes or spices, this will probably be appreciated by everyone.

What is in spiced potato wedges?

This potato wedges recipe is a 4 ingredient recipe. We simply combine large potatoes cut up into wedges with oil, garam masala and salt. It is so simple to make.

What do spiced potato wedges taste like?

There is a lovely sweetness from the potato and that works delightfully well with the warmth of the spices. We don’t use chilli powder, instead we like the warmth the other ground spices bring. The kick in this spice mixture is from ground black pepper.

What does garam masala taste like?

Garam masala is a spice mix that adds aroma, warmth and depth to all kinds of dishes. It usually contains grounds spices such as cumin, coriander, cardamon, cinnamon, clove, and black pepper.

How to cut potato wedges?

Place the potato on its side and cut in half lengthways. Place the flat side down on the chopping board and cut in half again lengthways. You should now have a potato in long quarters.

Now, depending on the thickness of your potato, you can cut each quarter again either into two or three wedges. Either slice once through the diagonal, or make two cuts.

For small wedges now slice all the long wedges in half to make shorter potato wedges.

What do you serve with spicy potato wedges?

These baked potato wedges are great with most roast meat dishes as a great alternative to roast or mashed potato. We also cook them up to serve with curry, stew, or even a nice salad.

Can you use any other spices with the wedges?

If you don’t have any garam masala to hand you can easily make your own mixture or even amounts of ground cumin, ground coriander, ground black pepper, ground cinnamon, and ground clove. Or you could pick your own spices to create your own spicy sprinkle.

We deliberately chose not to add chilli to our wedges but if you like some spicy heat beyond the black pepper you could add a touch of chilli power or dried chilli flakes.

This is an Indian-spiced potato wedges recipe but by all means you can adapt it to suit your taste and preferences. This would be great with a smoked paprika coating. Or perhaps go Mexican style with chilli, chipotle, garlic powder, or oregano additions.

SPICED POTATO WEDGES (SERVES 4)

INGREDIENTS

  • 2-3 Large Baking Potatoes
  • 1-2 Tbsp Vegetable Oil
  • 1Tbsp Garam Masala
  • Large pinch of Sea Salt Flakes

METHOD

  1. Preheat the oven to 180C (fan) and cover a large baking tray with foil.
  2. Peel and slice the potatoes into wedges.
  3. In a large mixing bowl toss the potatoes in vegetable oil, garam masala, and salt.
  4. Tip the coated potato wedges onto the foil and spread evenly. Bake in the oven for 30 minutes or until golden and crispy.
