CHOCOLATE BROWNIES RECIPE (serves 24) 

Ingredients

  • 300g Unsalted Butter
  • 300g Dark Chocolate (70% cocoa solids) broken into pieces
  • 5 large Free-Range Eggs
  • 450g Granulated Sugar
  • 1 Tbsp Vanilla Extract
  • 200g Plain Flour
  • 1 Tsp Sea Salt

Method

  1. Preheat the oven to 180C fan / 200C / 400F / Gas Mark 6. and line a baking tin (either a 12 x 8in traybake tin or a 10-inch square) with greaseproof paper.
  2. Melt the butter and chocolate together using bain-marie method (bowl over simmering water), or melt together in a non-metallic bowl in the microwave for 2 minutes, stirring every 30 seconds. Set aside to cool.
  3. In another bowl beat together the eggs, sugar, and vanilla extract until the mixture is thick.
  4. Once cooled, pour the chocolate-butter mix into the egg and sugar mixture. Stir until well combined.
  5. Now sift the flour and salt into the mixture, and stir until smooth.
  6. Pour the chocolate brownie mixture into the prepared baking tin and place in the oven for 30 minutes or until the whole top has formed a light crust and cracked a little. It should not wobble but will be gooey on the inside.
  7. Leave to cool for 15-20 minutes before cutting into portions.
