We love a sticky thick onion gravy. It’s perfect for those evenings when the night draws in fast. When you just want the comfort of a roast dinner, or sausage and mash. Onion gravy has that hearty autumn-winter comfort food vibe which we absolutely love here at Christmasphere HQ.
This recipe is a relatively easy thick onion gravy recipe. The key is the cook the onions low and slow. That is, cook the onions on a low heat for a longer length of time so that they turn deliciously golden and caramelised.

We add fresh herbs such as bay leaf and thyme sprigs to give wonderful earthy flavour and fragrance.
What to serve with onion gravy?

How to make vegetarian or vegan onion gravy
To make this recipe vegan, substitute the butter for vegetable oil, or non-dairy butter alternative. Choose a vegan vegetable stock, and a vegan red wine.

EASY STICKY THICK ONION GRAVY (SERVES 4-6)
INGREDIENTS
- 30g Unsalted Butter
- 1 Tbsp Vegetable or Olive Oil
- 3-4 medium-sized White Onions, finely sliced
- 1 Bay Leaf
- 3 Sprigs of Fresh Thyme
- 1 Tsp Light Brown Sugar
- Large Pinch of Maldon Sea Salt Flakes
- 1 Tbsp Plain Flour
- 2 Tsp Red or White Wine Vinegar
- 200ml Red Wine
- 500ml Vegetable or Chicken Stock
METHOD
- In a large frying pan melt the butter and vegetable/olive oil over a medium heat. Add the sliced onions along with the bay leaf and fresh thyme. Stir until coated in the fat before sprinkling with the sugar and salt. Lower the heat and slowly the cook the onions, stirring regularly, until golden and caramelised.
- Add the flour and stir into the onions, cooking for a few minutes.
- Turn up the heat and add the vinegar and wine, keep stirring to allow the flour to incorporate. Reduce the liquid by half.
- Add the stock and bring to the boil for about 5 minutes, or until the gravy is thick.
- Taste and season if necessary with more salt and pepper.
Caramelised Onion Gravy
